Ingredients
- 2 English cucumbers cut into 2-inch rounds or desired thickness
- 1 teaspoon kosher salt
- 2 radishes, thinly sliced
- 1 tablespoon rice vinegar
- 1 tablespoon olive oil
- 2 teaspoons sugar
- 1 teaspoon toasted sesame oil
- 2 teaspoons soy sauce
- 2 cloves garlic, finely grated
- 1/4 teaspoon crushed red pepper flakes
- 1 16-ounce bag Arizona Farms™ Natural Cheddar Cheese Curds, Jalapeño, cut into 3/4 inch pieces
- 2 small jalapeños, seeded and thinly sliced
- 1/4 cup cilantro leaves
- Sesame seeds, for garnish
Instructions
- Combine cucumbers and salt in large resealable bag. Smash cucumbers with rolling pin, breaking into roughly 1-inch shapes. Transfer to colander, and let drain for at least 5 minutes.
- Toss drained cucumbers, radishes, vinegar, oil, sugar, sesame oil, soy sauce, garlic and crushed red peppers together in large bowl until coated.
- Thread each toothpick with 1 piece of cucumber, 1 piece of cheese, 1 slice of jalapeño and a few cilantro leaves. Repeat with remaining ingredients. Garnish bites with sesame seeds and serve.
