Strawberry Cream Cheese Stuffed French Toast
French toast that will fill your tastebuds

For strawberry syrup
- 1 pound fresh strawberries hulled and diced
- 2 teaspoons fresh lemon juice
- 2 tablespoons granulated sugar
- 2 tablespoons honey
For french toast
- 1 8 ounce package cream cheese
- 1/4 cup plus 2 tablespoons powdered sugar
- 1 1/2 teaspoons orange zest divided
- 1 teaspoon pure vanilla extract divided
- 1 cup fresh strawberries diced
- 4 large eggs
- 1 cup whole milk
- 2 teaspoons honey
- 10 slices thick-sliced whole wheat bread
- 3-4 tablespoons unsalted butter
For strawberry syrup
In a medium saucepan bring strawberries, lemon juice, sugar and honey to a boil over medium-high heat. Reduce heat to a simmer and cook until the syrup is thickened and reduced by half, about 10-15 minutes. Remove from heat and set aside to cool.
For french toast
Beat together cream cheese, powdered sugar, 1/2 teaspoon orange zest and 1/2 teaspoon vanilla. Gently fold in strawberries.
Whisk together eggs, milk, honey, remaining 1 teaspoon orange zest and 1/2 teaspoon vanilla in a shallow dish.
Spoon cream cheese filling onto a slice of bread, top with a second slice and sandwich together. Repeat with remaining slices.
Heat a tablespoon of butter in a large saute pan over medium heat.
Dip two sandwiches in egg mixture covering all sides and add to the hot pan. Cook on each side for 3-4 minutes or until golden brown. Repeat with remaining butter and sandwiches. Top with strawberry syrup and serve immediately.
