Ingredients
- 2 tbsp butter
- ¼ onion diced
- 1 jalapeno membranes and seeds removed, diced
- 2 cloves of garlic minced
- 2 tbsp flour
- 1 ½ cups milk
- 3 cups Colby cheese grated
- 1 ½ cups Cheddar cheese grated
- 1 ½ cups Pepper Jack cheese grated
- 1/2 cup sour cream
- 2 tomatoes diced
- 1 Poblano chili roasted and diced
- Salt
Instructions
- In a large pot, melt butter on medium heat.
- Add onion and jalapeno, saute for 5 minutes.
- Add garlic, saute for additional minute
- Mix flour in with vegetables, slowly stir in milk until mixture is smooth
- Stirring constantly, slowly add in the cheeses until melted
- Add sour cream and stir
- Fold in tomatoes and poblano
- Add salt to desired taste
