Ingredients
- 8 oz rigatoni pasta
- 1 tbsp olive oil
- 3 tbsp Parmesan cheese, finely grated
- 1/2 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 lime, juiced
- 1 tbsp ground chipotle pepper powder
- 1 cup sour cream
- Kosher salt and freshly ground black pepper to taste
Instructions
- Cook rigatoni in large pot of salted boiling water according to package directions; drain well
- Toss cooked rigatoni, oil, Parmesan, Italian seasoning and garlic powder together in large bowl
- Coat air fryer basket with olive oil cooking spray and preheat to 350°F
- Working in batches, cook rigatoni until golden-brown and crisp, about 10 to 15 minutes
- Meanwhile, combine lime juice, chipotle pepper and sour cream in medium bowl. Season with salt and pepper to taste
- Serve pasta chips with sour cream mixture for dipping
