Combine cucumbers and salt in large resealable bag. Smash cucumbers with rolling pin, breaking into roughly 1-inch shapes. Transfer to colander, and let drain for at least 5 minutes.
Toss drained cucumbers, radishes, vinegar, oil, sugar, sesame oil, soy sauce, garlic and crushed red peppers together in large bowl until coated.
Thread each toothpick with 1 piece of cucumber, 1 piece of cheese, 1 slice of jalapeño and a few cilantro leaves. Repeat with remaining ingredients. Garnish bites with sesame seeds and serve.
