Smashed Cucumber & Jalapeno Cheese Curd Bites

Fresh veggies slices marinated in an Asian marinade and skewered with jalapeno cheese curds.

Ingredients

  • 2 English cucumbers cut into 2-inch rounds or desired thickness
  • 1 teaspoon kosher salt
  • 2 radishes, thinly sliced
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • 2 teaspoons sugar
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons soy sauce
  • 2 cloves garlic, finely grated
  • 1/4 teaspoon crushed red pepper flakes
  • 1 16-ounce bag Arizona Farms™ Natural Cheddar Cheese Curds, Jalapeño, cut into 3/4 inch pieces
  • 2 small jalapeños, seeded and thinly sliced
  • 1/4 cup cilantro leaves
  • Sesame seeds, for garnish

Instructions

  • Combine cucumbers and salt in large resealable bag. Smash cucumbers with rolling pin, breaking into roughly 1-inch shapes. Transfer to colander, and let drain for at least 5 minutes.
  • Toss drained cucumbers, radishes, vinegar, oil, sugar, sesame oil, soy sauce, garlic and crushed red peppers together in large bowl until coated.
  • Thread each toothpick with 1 piece of cucumber, 1 piece of cheese, 1 slice of jalapeño and a few cilantro leaves. Repeat with remaining ingredients. Garnish bites with sesame seeds and serve.
