Homemade Macaroni and Cheese

  • 2 cups milk
  • 6 ounces Velveeta cheese cubed
  • 1 1/3 cups cottage cheese
  • 2/3 cup sour cream
  • 2 1/4 cups sharp cheddar cheese shredded, divided
  • 1 1/2 cups soft bread crumbs
  1. Preheat oven to 350 degrees

  2. Cook macaroni according to package directions. Drain and place macaroni in a greased 9x13 baking pan

  3. In a medium saucepan, melt 4 tablespoons butter on medium-low heat. Add in the flour, salt and sugar. Stir until smooth

  4. Gradually add in the milk, stirring constantly. Bring to a boil; cook and stir for 2 minutes or until the mixture has thickened. Reduce heat to low

  5. Stir in the Velveeta cheese until melted

  6. Stir in cottage cheese, sour cream and one cup cheddar cheese until melted

  7. Pour the cheese mixture over macaroni. Sprinkle with the remaining cheddar cheese

  8. Melt remaining butter and toss with bread crumbs; sprinkle over top of the casserole

  9. Bake uncovered at 350° for 30 minutes or until golden brown
